Observation (CORRECTED DURING INSPECTION): One spray bottle of bleach and water was too strong (bleaching out the test strip) and the other bottle of bleach and water was not working (ie. not spraying).
Corrective Action(s): Ensure chlorine sanitizer solution is maintained at 100ppm concentration. Ensure sanitizer equipment (ie. spray bottles) and working and in good order to accomodate sanitizing.

Observation (CORRECTED DURING INSPECTION): Noted bay door open at time of inspection. No food preparation was taking place at time of inspection.
Corrective Action(s): Keep bay door closed to ensure pests do not enter the premises.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation (CORRECTED DURING INSPECTION): 1) Noted an oven by the bay door in the premises. Oven does not have a hood ventilation system. Staff said that they do not use it to cook from raw animal original or any foods that produce grease laden vapors.
2) Noted some parts of flooring in the premises cracked/wearing away.
Corrective Action(s): 1) Remove oven from premises and/or submit floor plans for formal approval should you wish to keep the oven.
2) Repair/finish cracking/wearing away flooring as part of ongoing maintenance.

Comments

Premises not in operation at time of inspection. Facility is mainly used during Thanksgiving and Christmas to make extra pies for busier times of the year.
Operator inquired about possibly renting out the premises during slower times of the year. Ensure any renters apply for a separate business licence and health approval from Fraser Health. Applicants should have a compatible menu/food item with the premises.
Hand wash station fully equipped with soap, paper towel, hot and cold running water. Ensure paper towel is stored in dispenser.
Both upright cooler units at 4C. Upright freezers -16C and -18C.
Good general sanitation. No obvious signs of pest activity at time of inspection.
Premises has contract with a professional pest control company that comes in once every 2 weeks. Follow all recommendations made by technician.
Dry storage area well maintained. All foods stored off the ground.
Lights in food preparation areas all had sleeves.
Bleach available on site.
Quat sanitizer comes in spray bottle premixed 200ppm - used mostly during food production as per operator.
Do not mix quat and chlorine sanitizers.
High temperature dish washer achieved 71C (with thermolabel)
