ATTENTION:

Temperature of the display cooler at sushi prep area measured >4C
As this is rush hour, the coolers are constantly being open, which may have affected the temperature. Ensure to keep monitoring the temperature after rush hours to confirm that temperature goes down to 4C or below. If the temperature does not lower to 4C, do not use these coolers to store fish before repair is made. Follow up inspection is to be conducted tomorrow to confirm temperatures.
- Ensure that 100ppm chlorine sanitizers are available in the kitchen & sushi prep area separately.
- Replace the rice scoop in the dry storage container as broken pieces of plastic may contaminate rice.
