Observation: 1) Food debris found on shelves and floor in sushi making area. This will attract pests.
2) Accumulation of grease found on the exterior surfaces of cooking equipment (flat grill, deep fryers, etc); on the wall behind the cooking equipment; and on the floor beneath the cooking equipment. This will attract pests.
Corrective Action(s): 1) Remove all items off the shelves and floor int he sushi making area, and wash all these surfaces with hot water and soap to remove food debris. Rinse with hot water and then sanitize. Ensure this is being done weekly.
2) Scrap and wash exterior surfaces of cooking equipment, walls and floors beneath & behind cooking equipment to remove the grease. Use hot water, soap/degreaser and scraper/brush. Rinse with hot water and sanitize. Ensure this is being done at least twice a month, ideally every week.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temp of 71.9C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas. No signs of pests.
- Exhaust canopy's next professional service to be completed in February 2023, as per service sticker.
- Valid, FoodSafe certified staff present.
- All surfaces are durable, sealed, and cleanable. All single-use materials (cardboard, saran wrap and aluminum foil) are discarded every night.
