-Display cooler is not in use and will be replaced with a new one. -Sanitizer is at each prep area 200 ppm- Ensure to check the concentration with proper test strip ( chlorine test strip for bleach sanitizer, quats test strip for quats sanitizer) **Ensure to remind staff to make fresh sanitizer every 3 hrs and wash/rinse wiping rags before storing in the bucket of sanitizer ** Cutting boards in use - Remind staff re: cleaning and sanitizing the boards every 2 hrs and when the products is changed Log sheet for coolers and freezers are on site and up to date- Lable coolers and freerzers with numbers to match with log sheet. No signature is obtained at time of visit, explained verbally and a copy will be sent to the operator later via email.
