Ensure display coolers are not overfilled. Packages of Saputo sliced meats and cheese were loaded past the load limit line marked on the side of the fridge and temperatures were marginal.
Check concentration of quats sanitizer daily.
Ensure the handling of the smoke salmon is in accordance with the store's foodsafety plan. Packaging on the vacuum packaged smoke salmon may need to be loosed to allow air to circulate during refrigeration storage.
General food handling procedures appear satisfactory.
Temperature of hot and cold holding equipment is satisfactory.
General sanitation is satisfactory.
Cooking temperature of food is measured with a thermometer and recorded.
