Routine inspection

- Hand washing stations fully supplied with liquid soap and paper towels. Hand washing stations are to be free of obstruction.
- Sliding coolers measured at 4C or colder. under counter cooler measured at or below 4C. Thermometers noted inside units.
- Freezers are at or below -18 C. Ensure to clean the ice build up inside 2 chest freezers in front area.
- 2 new standing cooler added to the kitchen. One sliding door cooler decommissioned and used as storage.
- Sanitizer chlorine water solution available at 100-200 ppm. Proper concentration of sanitizer discussed with the operator. Use of wiping cloths discussed with the operator. Ensure to dedicate wiping cloths to each section.
- Dish washer final rinse water measured 200 ppm chlorine at the dish surface.
- 2-comp sink utilized to wash and rinse dishes and DW used to sanitize dishes.
- Floor observed to be clean and maintained.
- Range hood and exhaust grid observed to be clean.
- No obvious sign of pest observed at this date.

Reminders:
- Make sure cleaning and sanitizing table tops and food contact surfaces done frequently.
- Ensure wiping cloths are organized in different sections and remove the one not needed.
- Utilize chlorine test strips to ensure 100-200 ppm chlorine in sanitizer bleach water solution
