Observation: High temp. dishwasher does not reach 71 degrees C on plate surface during sanitizing cycle.
Corrective Action(s): 71 degrees C must be reached during sanitizing cycle to properly sanitize the food contact surfaces. Stop using the high temp. dishwasher until it is fixed and instead use the 3 compartment sink with Quat sanitizer for final sanitizing step.

Hand sinks have hot/cold running water and are stocked with paper towels and soap.
3 compartment sink available with Quat used for sanitizing step.
Sanitizer spray bottle readily available with 200 ppm Quat.
Cooler temps operating at or below 4 degrees C; freezer temps operating at or below 4 degrees C; hot holding units operating at or above 60 degrees C.
No signs of pests. Pest management plan in place.
Fume hood cleaned and serviced.
FoodSafe Certified staff present at time of inspection.
