Follow up inspection.
The high temperature dishwasher has been serviced and the final sanitizing rinse is now >85 C at the gauge and >71 C (72.8 measured0 inside of the machine - good.
Maintain all equipment and keep daily temperature records for all coolers and the dishwasher.
Recommend that you obtain a dishwasher thermometer to confirm that the internal temperature of the dishwasher reaches 71C. Thermometer should be NSF, dishwasher safe (with protective case), and min/max so it will remember the maximum temperature. Temperature strips could also be used. Maintain dishwasher in good condition.
