Observation: Mouse droppings were observed in the dry storage area under the shelves and along the walls.
Corrective Action(s): - Remove the mouse droppings with 1 part bleach to 9 part water solution.
- Maintain the facility in sanitary condition and regularly clean the floors and hard to reach areas.

Comments

Routine inspection conducted at Khalsa School kitchen. Minimal cooking was conducted at the time of inspection. As per the staff, cooking is mostly done on weekends.

Temperature:
- Coolers were maintained at 4C or less.
- Freezers were recorded at -18C or less.
- No hot holding observed at the time of inspection.

Storage:
- All food items were stored at least 6" off the floor.
- All products were found either in original packaging or covered inside coolers.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer bucket available and the concentration of bleach noted at 200ppm.
- Hot temp mechanical dishwasher maintained in good working order and reached a rinse temperature of 81.9C at the dish surface.
- Utensils and tongs were found in sanitary condition.
- No grease/dirt build-up on the vents. Last service was completed in August 2021.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate.

NOTE - Store clean laundry in a designated area.
