Comments

- Main hand washing sink in kitchen was not obstructed and was easily accessible. Good.
- Bleach sanitizing solution available at 100 ppm in sanitizer buckets. Reminder that wiping cloths must be stored in sanitizer solution in between uses.
- No improper thawing was noted at time of inspection. Reminder that all frozen food must be thawed/defrosted in a cooler overnight or under cold running water, at 4C or colder at all times. Do not thaw food out at room temperature.
- Meat slicer was in use at time of inspection - reviewed cleaning and sanitizing procedures. **Ensure to disassemble the slicer for thorough cleaning and sanitizing after each use or every 4 hours at a minimum. Also ensure the area behind the blade guard is thoroughly cleaned and sanitized.
- Walk-in cooler was noted to be in better organization at time of inspection, and all food items were covered. **Continue keeping walk-in cooler organized with raw meats and eggs stored below or away from ready-to-eat items.
- No garbage bags were being used to store/cover food at time of inspection.
