- Handsinks are equipped with hot & cold running water, liquid soap & paper towels **Ensure not to put any exposed foods (ie. open bag of chips) where staff needs to reach out for soap/ paper towels.
- 200ppm QUAT sanitizer available
- 12.5ppm iodine residual detected at the end of sanitizing cycle in the glasswasher
- 50ppm chlorine residual detected at the end of sanitizing cycle in the low temp dishwasher
- All coolers maintain <4C
- Freezers maintain <-18C
- Cold ingredients that are left outside are properly placed in ice bath
- Hot holding foods (ie. chicken, beef) measured >60C
- Utensils are maintained in a sanitary manner
