Observation (CORRECTED DURING INSPECTION): The sanitizer spray bottle at the front did not have any detectable sanitizer.
Corrective Action(s): The operator refilled the sanitizer bottle with 200 ppm QUATS solution at the time of inspection. Ensure the sanitizer bottles are refilled timely to maintain adequate sanitizer concentrations.

Routine inspection conducted. The facility is in satisfactory sanitary condition.

Temperatures:
- Walk-in cooler: 2C
- Under counter freezer: -18C
- Upright freezer: -21C
- Hot-dog / rolls machine: 79C
- Hot holding: 71C
- Food inside the hot holding unit had an internal temperature of 60C or more.
All units were equipped with accurate thermometers.

Sanitation:
- Hand washing sink was equipped with splash guards, hot/cold running water, liquid soap, and paper towels.
- 3-compartment sink was equipped with functional drain plugs.
- The sanitizer dispenser of Quaternary ammonium compound (QUATS) dispensed at 200 ppm.

Storage:
- Stainless steel racks are used for storage.
- Chemicals are stored under ware washing sinks away from food.
- Food is stored at least 6" off the floor to facilitate cleaning.
- Food grade containers are used.

Pest Management:
- No signs of pest activity noted at the time of inspection.

Handling and Hygiene:
- Food held in the hot holding unit is time monitored using an online software.
- Pizza his hot-held for 1 hour, other items for 2 hours. Hot dogs and rolls are hot-held for 4 hours.

Administration:
- Employees and manager on site have Food Safe level 1 certifications or equivalent.
- Permit is posted.

COVID-19 Safety protocols are in place. The plan is available on site.

Signature not required due to the COVID-19 pandemic. A copy of the inspection report is to be emailed to the operator on the provided email address. The violations were discussed with the manager.
