Observation: No drain plugs present in two-compartment sink for properly washing, rinsing, and sanitizing all utensils.
Corrective Action(s): Obtain a drain plug so that one compartment can be filled with sanitizer. This is required so that trays and utensils can be immersed inside the solution for proper sanitizing.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Repeat issue. Plastic bags found directly on top of meats, with rags tied to display as "wiping cloths" for hands.
Corrective Action(s): Plastic bags / wiping cloths removed at time of inspection. Only use single-use gloves for handling meat products, and do not use the same cloth to continuously wipe hands. This is not a sanitary practice.

Repeat violations over time may result in further enforcement.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Jugs found directly immersed inside marinade sauces.
2. Chicken inside the walk-in cooler overfilled its original container and was not suitably covered at time of inspection.
Corrective Action(s): 1. Jugs were removed from the marinade. Ensure that jugs are kept out of the marinade to protect it from contamination.
2. Chicken was transferred to another container and a lid was placed on top. All food products should be adequately covered.

Comments

Routine inspection conducted.
- Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area and in restroom
- Bleach sanitizing pail contains 200 ppm chlorine residual. Ensure that cloths are always immersed INSIDE the sanitizing pail - do not suspend rags on your display cooler for re-use!
- All food products stored at least 6" off the floor
- Meat slicer is currently not in use - operator states that it is cleaned every 4 hours. EHO informed operator that it should be cleaned AFTER USE if it is not used continuously - this was achieved at time of inspection
- 2-compartment sink available but with no drain plugs (see violation code above). Obtain drain plugs so that you can fill up a compartment with bleach water for sanitizing / killing bacteria
- No signs of recent pest activity at time of inspection

Temperatures:
- Walk-in cooler at approximately 4-5C
- Display coolers (left) at 4C and (right) at 2C
- Stand-up freezer at -11C
- Chest freezer at -18C
- One chest freezer is not working and has been turned off. No products inside the chest freezer. Freezer will be discarded shortly
- Thermometers present inside cooling units

The following requires your attention:
- No meat pickle present on premise anymore. Invoices for unlabelled products to be sent to the health inspector: Frozen salmon, pheasant. Always keep a photocopy of all invoices on site, even if you are sending them in to your accountant
- Screen door intact, but mesh is starting to fall apart on the sides. Repair the screen door or keep the back door closed
