Observation (CORRECTED DURING INSPECTION): The following cold potentially hazardous food items were stored at 13C inside the improperly working display cooler:
- sausage roll
- chicken pie
- beef pie
The staff stated that these items were stored for greater than 6 hours.
Corrective Action(s): The staff discarded the food items. All cold potentially hazardous food items must be stored at < or = 4C at all times.

Observation: Multiple dry food (ie. chocolate, flour, sugar) were stored inside their original bags uncovered.
Corrective Action(s): Obtain dry food carts with proper pest proof lids to store all opened dry food items.

Observation: The front display cooler was measured at 13C. The thermometer inside the cooler measured 14C.
Corrective Action(s): Replace the cooler and ensure that is maintains temperature < or = 4C at all times.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: There was no FOODSAFE certified staff on duty.
Corrective Action(s): At least one FOODSAFE certified staff must be working at all times. This is a repeat violation and failure to comply will lead to stricter enforcement and/or violation ticket.

Comments

- General sanitation is good.
- All handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All other coolers (walk in, prep, undercounter) < or = to 4C.
- Walk in freezer < or = to -18C.
- Most food items are stored in plastic insert containers with lids.
- You must begin a temperature log for all coolers and freezers. Template was provided to staff.
- High temperature dishwasher achieved 71C at the plate level during the rinse cycle.
- Two compartment sink available for manual dishwashing. Sanitizer available at 200 ppm QUAT solution.
- Surface sanitizer available in spray bottle at 200 ppm QUAT solution. Ensure to provide surface sanitizer at each station (ie. main kitchen, serving area) at all times to clean and sanitize any food contact surfaces.
- Dry storage area is satisfactory.
- No signs of pest activity.
