Observation (CORRECTED DURING INSPECTION): 1. Cooked shrimp tempura measured with an internal temperature of 33C and stored under ambient air temperature. Staff stated they were cooked an hour ago.
2. Raw proteins, cut vegetables and sauces stored inside the walk-in cooler measured with an internal temperature of 8C.
Corrective Action(s): 1. Cooked tempura is an potentially hazardous food that must be stored at 4C or less. Transfer the tempura to a functional cooler and do not store any tempura under ambient air temperature.
2. Move the aforementioned food into a functional cooler.

Observation (CORRECTED DURING INSPECTION): Ice scoop was stored inside an unsanitary container with a aged cloth lining inside.
Corrective Action(s): Clean and sanitize the ice scoop and container immediately. Discard the cloth do not line the container with any porous material liners.

Observation (CORRECTED DURING INSPECTION): Raw beef steaks stored on top of ready to eat products inside the walk-in cooler. Steaks were wrapped with saran wraps and did not appear to be leaking juices.
Corrective Action(s): Move the raw steaks to the lowest shelf in the walk-in cooler and away from any ready to eat food. Do not store any raw proteins on top of and beside any ready to eat food and vegetables.

- Under the two sandwich coolers in the kitchen.
- Under the deep fryers

- High temperature dishwasher registered 78C at plate level.
- No pest activities observed.
- Temperature records sporadically maintained. Ensure temperature records are maintained on a daily basis.
