Observation (CORRECTED DURING INSPECTION): Internal temperature of pizza on display was between 27C to 32C. No timer or tracking system in place to ensure food products are not displayed for more than 2hr at a temperature less than 60C. A timer or tracking system is to be implemented to verify that pizza products are not kept less than 60C for more than 2 hours. This has been noted on the last inspection report.

Observation: Condenser pipe from the walk-in cooler is still draining into the middle compartment of the 3 compartment sink. Condenser pipe needs to be re-plumbed directly into a sanitary sewer system as noted on the initial inspection report.

Observation: Mop sink not assessable as it has been block by shelving units. Staff members have been disposing mop water into the storm system located on the streets. All waste water is to be disposed into a sanitary sewer system and mop sink needs to be assessable.

Routine inspection conducted and the following were noted:
Walk-in cooler and pizza coolers were at 4C.
Freezer unit at -18C.
Food items properly covered and stored at least 6inches off the ground.
no pest noted
Chlorine sanitizer at 100ppm.

The following requires correction.
Only 1 sink plug was available for the sanitizing compartment. Ensure at least 3 sink plugs are available so that the steps for manual ware washing is properly followed.
Ensure all staff member certified with FOODSAFE Level 1 maintains a photocopy of the certification onsite
