-Walk-in cooler was at 4C
-Prep cooler was at 4C (top and bottom).
-Upright cooler was at 4C.
-Service area bar cooler was at 2C. Service area cooler by the ice handwash station was used for the storage of non-potentially hazardous sauces.
-Under counter freezer was at -15C.
-Hot holding was greater than 60C.
-Cutlets were cooked to greater than 74C.
-Cooling wand available on-site to rapidly cool hot potentially hazardous foods. Curry made today was cooled with a mixing wand and in the walk-in cooler at 14C.
-High temperature dishwasher had a final rinse of 77C on the dish surface on consecutive cycles (minimum of 71C required for proper sanitizing).
-Bleach sanitizer pails labelled and tested at 200ppm.
-Handwash stations were accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Mandolin slicers were properly disassembled for cleaning and sanitizing after each use. Blade area was found to be clean and sanitary.
-Tong stored in water - change every hour. Utensils are changed every 2 hours.
-General food storage practices good at the time of inspection. Raw meats stored separately from ready-to-eat foods.
-General sanitation good at the time of inspection.
-Facility serviced by professional pest control operator on a monthly basis. Service report from 2 days ago did not indicate any pest issues.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until January 5, 2027.
