Follow up to report MBEK-D7GTWW.
Operator has replaced all of the sweets coolers and the preparation cooler. Preparation cooler at 2 degrees C (above and below). Sweets coolers (three total) at 2 to 4 degrees C.
Thermometers / temperature gauges available for above-noted coolers. It is recommended to obtain a thermometer within the coolers that have only a temperature gauge (two of three sweets coolers).
Stored food is covered. No open cans of food observed. Operator has obtained additional ladles with handles that can be mounted on the edge of a container, to prevent the handles from coming into contact with food. Scoops stored safely at time of inspection. No containers of potentially hazardous food observed at ambient temperature (e.g. pakoras in oven).
Food colour and rangaat observed during previous inspection was discarded.
Plastic racks for dishwashing were not being used for food storage at time of inspection.
High temperature dishwasher serviced. Dishwasher measured 73 degrees C at the plate level during the final rinse (required: 71 degrees C or more at the plate level). It is advised to obtain a waterproof min/max registering thermometer to confirm the temperature at the plate level if unable to view gauges to confirm dishwasher is meeting temperature requirements.
Hand sinks are accessible and supplied with hot and cold running water, liquid soap, and paper towels. Proper hand hygiene practices observed.
Bleach water sanitizer available in buckets, labeled spray bottle, and third compartment of warewashing sinks at 100 to 200 ppm chlorine. Chlorine test strips available.
Utensils and equipment maintained in sanitary condition. A new knife holder that can be removed has been mounted near the preparation cooler for the storage of knives.
Areas affected by rodent droppings have been cleaned and sanitized. Operator is monitoring rodent activity, and cleaning/sanitizing areas affected by rodent droppings on a regular basis.
Gaps/holes have been sealed since the previous inspection (e.g. gaps observed around pipes located in the ceiling, holes in drywall). Operator to continue to monitor for pest activity and continue to seal gaps/holes as necessary on an ongoing basis.
Upstairs storage area has been organized and cleared further since the previous inspection. Operator to continue to work on this area to further limit the storage of unnecessary items and ensure all items are kept off the floor to better monitor for pest activity, and for ease of cleaning. Operator plans to obtain additional storage racks.
FOODSAFE requirements met. Manager who was on site at time of inspection has FOODSAFE Level 1 which is valid to July 25, 2029. Operator plans to have additional staff certified.
Note: Operator discussed potential changes to layout at the time of inspection. Ensure that the proposed layout is submitted to the undersigned EHO for review, as health approval is required prior to making changes to layout.
