Observation (CORRECTED DURING INSPECTION): Mulitple fries toppings heated in advance and placed in cooler prior to use, internal temperatures 14 - 22 C.

As per previous inspection, without defined cooling procedures and temperature logging cooling procedures are not to be conducted and all food items are to be prepared in a cook serve or cook / hot hold / serve manner.
Heating foods prior to placing foods in hot holding equipment will allow food to remain at unsafe temperatures.
