Observation: Accumulation of food debris observed on the top and side of the spinner for two dough mixer.
Corrective Action(s): Clean and sanitize the aforementioned dough mixers to ensure equipment are maintained in sanitary conditions. Correct by: today.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer from two bleach bottles measured at less than 50 ppm bleach. 100-200 ppm is required to properly sanitize food contact surfaces and equipment.
Corrective Action(s): Operator discarded and refilled the bottles with 200 ppm bleach sanitizer. Clean and sanitize all food contact surfaces again. In the future, ensure bleach sanitize is changed on a daily basis as bleach concentration decreases over time.

Observation (CORRECTED DURING INSPECTION): 1. Bags of flour were not covered and directly open to the air.
2. Raw meat observed to be stored on top of raw lettuce inside the walk-in cooler. No sign of leaking meat juices.
Corrective Action(s): 1. Cover the bags of flour to ensure the contents are protected from contamination.
2. Move the raw lettuce on top of raw meat. Ready to eat products should always stored away from raw proteins to prevent contamination.
