Routine inspection conducted and the following were noted:
All cooler units at 4C or below.
Food items stored within prep-cooler inserts were 4C or below.
Walk-in Freezer at -13C. Ensure freezer unit is capable of frozen foods less than or equal to -18C.
Low temperature chlorine dishwasher achieved a final rinse concentration of 100ppm. Ensure dishwasher unit is monitored daily with chlorine test strips to verify that it is in good working order.
Quats dispenser at 200ppm. Wiping rags stored in a 200ppm quats solution.
All food items stored at least 6 inches off the ground and properly cooler.
General sanitation was satisfactory.
Dry storage area was organized.
No pest activity noted.
Hand washing stations satisfactory.
