Corrective Action(s): Newspaper is not food grade, contains ink and other contaminates that will contaminate food.
All fried fish observed cooling on newspaper discarded.
Do not use newspaper to line any food contact surfaces. Always use food grade paper.

Observation (CORRECTED DURING INSPECTION): No surface sanitizer available at the beginning of the inspection.
Corrective Action(s): Third compartment sink filled with sanitizer during inspection. Sanitizer measure 100ppm chlorine.
Bucket of bleach sanitizer made at request to sanitize front of house/ice cream area.

Observation: 1. Bowl observed stored directly on containers of food that does not have a lid. (CORRECTED DURING INSPECTION)
2. Ice machine observed to have middew growth.
Corrective Action(s): 1. As the food was in active use, lids are not neccessary. However, do not double stack containers/bowls without covers as the bottom of the bowl/container may touch the food below and contaminate food.
2. Please clean and sanitize ice machine. To be completed by: Tomorrow.

Observation: Small prep cooler measure ambient temperature at 14C just after lunch rush. Food in prep cooler probed. Tomatos 6C, onions 7C, patties 6C.
Corrective Action(s): Please service prep cooler to maintain 4C and below. Do not store food in this cooler longer than 2hours. All unused food after 2hours must be discarded.
