Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: - Dirt/debris noted at the bottom of ice bin of ice machine. Note: Ice machine not currently in use. Limited ice present. Staff on duty reported it is being repaired.
Correction: - Empty ice and clean and sanitize ice bin. Ensure ice machine is cleaned regularly.

- Ice machine was replaced as previous ice machine was not working. New ice machine appears clean. Ensure ice machine is cleaned and sanitized regularly as part of your sanitation plan.
- Foods in walk-in cooler which had cooled were at 4C or colder. There were a few deeper containers in which butter chicken sauce was stored. Ensure shallow containers are used for cooling to ensure foods are cooled rapidly. Additionally, ensure temperature of food is monitored to ensure it is cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less.
- Foods in walk-in cooler were stored in manner which prevent contamination with raw meats stored beneath ready to eat foods.
- Bleach sanitizer solution present in spray bottle. Concentration measured 100-200ppm Chlorine. Ensure in use wiping cloths are stored in sanitizer solution.
