Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: A pink residue (biofilm / mildew) was observed on some surfaces inside the ice machine.
Correction: Discard ice. Ensure all surfaces within the ice machine are properly cleaned, rinsed, and sanitized. Mildew / biofilm may potentially contaminate ice. Date to be corrected by: Today.

Follow up to Rpt # MBEK-BEJUX9.

- Ice machine interior surfaces observed to be in clean condition. Reminder: Ensure ice machine is properly cleaned and sanitized on a regular basis to limit potential growth of biofilm / mildew. Ensure ice is discarded prior to cleaning and sanitizing and follow manufacturer's directions.
- No prepared sushi rolls observed at ambient temperature at time of inspection
- Cooked chicken was observed in a large shallow food container in the 1-door cooler. Continue to follow proper cooling practices which facilitate rapid cooling (e.g. cooling in shallow layers). Ensure that potentially hazardous food (e.g. chicken, beef) is cooled from an internal food temperature of 60 degrees to 20 degrees C within 2 hours, then from 20 degrees C to 4 degrees C within 4 hours. Verify temperatures with an accurate, sanitized probe thermometer.
- Container of detergent noted on previous report is labeled and stored away from food.
- It was stated that service technician has been contacted and cooler is to be serviced later today.
