Observation (CORRECTED DURING INSPECTION): - Back handwashing sink was not supplied with liquid soap. Wall mounted dispenser no longer present.
Corrective Action(s): - Liquid soap was supplied to handsink once staff were advised. Ensure both handsinks are always supplied with liquid soap in a pump style dispenser.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: - 2 door cooler at back of premises (adjacent to rice bins) was operating at 8C. Note: Aside from bottles of kombucha which require refrigeration, only non-potentially hazardous beverages were stored in this cooler at the time of the inspection.
Corrective Action(s): - Repair/adjust cooler so that it is able to maintain a temperature of 4C or colder. Ensure no potentially hazardous foods are stored in this cooler in the interim [Correction date: 23-Jun-2021]
Note: Kombucha was transferred to another cooler at the time of the inspection.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: - Flooring transition between is no longer in place between kitchen flooring and hallway flooring resulting in a gap between the two surfaces. Flooring must be smooth and continuous to allow for ease of cleaning and so that dirt and food debris does not collect.
Corrective Action(s): - Replace transition piece between flooring [Correction date: 23-Jun-2021]

Comments

- Premises and equipment maintained in sanitary condition
- Hot and cold running water supplied to handsinks and warewashing sinks
- Liquid soap and paper towel present at handsink in front area and in staff/public washroom. Back handsink supplied with liquid soap at time of inspection.
- Coolers (with the exception of 2 door reach in unit noted in violation above) were operating at 4C or colder
- Freezers were maintaining product in a frozen state. Temperatures measured -18C, -20C.
- Food stored in coolers and freezer was well organized and protected from contamination
- Rice cookers were maintaining cooked rice at >60C
- Quats sanitizer solution present in spray bottles and from dispenser at 2 compartment sink at appropriate concentration (200ppm).
- Dishwasher operational. 50ppm chlorine detected on dish after cycle.
- Monitoring in place for temperatures and dishwasher; however, had not yet been completed for the day. Recommend checking temperature and verifying sanitizer in dishwasher prior to opening so that if issues are identified, corrective measures can be taken prior to opening.


Covid Safety Precautions:

- Temperature/symptom screening in place for staff
- Seating is limited. Tables are distanced so that customers at separate tables are 2m apart
- Distancing markers present on floor
- Alcohol based hand sanitizer is available for customers
- Plexiglass present at point of sale counter
*Ensure high touch surfaces are disinfected with suitable disinfectant regularly. Bleach present and can be used (in diluted solution) to disinfect high touch surfaces (eg. door handles). Information sheet with additional information provided to Supervisor present.
