Observation (CORRECTED DURING INSPECTION): Dishwasher was not filling with water at time of inspection.
Corrective Action(s): Drain and screen were blocked by utensils. Corrected at time of inspection; dishwasher was working properly afterwards. 100 ppm chlorine detected at dish surface after final rinse cycle.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): - Hand washing sink in kitchen was blocked by a prep table and was used to store a bag of recyclables.
- Liquid soap dispenser was empty.
Corrective Action(s): - The hand washing sink must always be accessible for hand washing. Do not block access, do not use to store any items.
- All hand washing stations must be supplied with liquid soap, paper towels, and hot and cold running water.
Corrected at time of inspection.

Observation: Raw meat stored above cooked food in walk-in cooler.
Corrective Action(s): Always store raw meats BELOW ready-to-eat food items, such as cooked foods and vegetables.
Reorganize walk-in cooler such that raw meats have a designated space.

Observation: Mouse droppings observed in back storage area, in corners, on lower shelves of tables and storage racks.
Corrective Action(s): CORRECTION ORDER ISSUED.
Clean and sanitize all areas with mouse droppings. As previously discussed, keep lowest shelves of racks empty and keep all equipment protected from contamination (ex. in large containers with tight-fitting lids). Set up bi-weekly services with pest control company. Keep copies of invoices on-site.

Observation: - Holes in walls noted throughout facility, some holes improperly sealed.
- Lots of unused equipment stored onsite, some of which were soiled/dirty items.

All holes must be properly sealed, such that all surfaces are durable, non-absorbent, smooth, and easiliy cleanable. Remove all unused items, as clutter provides shelter for pests.
