Overall sanitation is satisfactory
Hand washing stations stocked with liquid soap and paper towel; hot and cold running water available at all sinks
All coolers at 4 C or lower; all freezers at -18 C or lower; all hot holding units at 60 C or higher
Three-compartment sinks on site for manual dishwashing; first compartment was filled with detergent and the third compartment was filled with QUAT sanitizer at 200 ppm
QUAT sanitizer buckets stored at different locations throughout to facilitate proper cleaning and sanitizing; detected 200 ppm of QUAT; QUAT dispenser in good working order;
Observed frequent and proper hand washing by staff
Separate tongs are available for cooked meat and vegetables at front prep cooler where sandwiches are made. Ensure to use appropriate tongs to prevent cross contamination
Organization in the walk-in coolers/freezer is good; dry storage in sanitary condition.
Technician from Pepsi visits bi-weekly to perform maintenance and cleaning of beverage dispenser including ice machine above.
Time stamps are made for all products.
Observed brushes at breading area that are used for breading chicken in flour. Ensure to have them cleaned and sanitized every 4 hours minimum.
No sign of pests noted at the time of inspection
