Observation: *REPEATED VIOLATION*
Few rodent droppings were observed in one corner of dry storage room.
Corrective Action(s): 1. Remove the mouse droppings and clean the area with 1 part bleach to 9 part water solution. Use proper PPE during cleaning.
2. Discuss the issue with your Pest Control Company.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Food spill was observed on the floor in walk-in cooler.
2. Ceiling of walk-in cooler had black spots/dirt build up and had noticeable musty odor which could be due to water leakage.
3. Food debris/dirt observed under the shelves in the small storage room (with ice cream freezer)
Corrective Action(s): Clean the abovementioned areas. Check for any water leakage in the walk-in cooler.
Ensure that the facility is cleaned regularly to prevent the build up of food debris/dirt.

Comments

Routine inspection conducted at the facility kitchen.

NOTE - At the time of inspection, back kitchen was being used by a private party for preparing food for a private event.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler was recorded at 4C
- Chest freezer for ice cream at -19C
Chest freezer has some ice build up along inner walls. Staff stated that the freezer will be turned off tomorrow (last day of school) and cleaned properly.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Dry storage room was well organized. Pest proof containers were used for food storage.
- Chemicals and cleaners were stored away from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Bleach sanitizer pail available and recorded at 200ppm.
- High temp mechanical dishwasher used for dishwashing and the temperature at rinse cycle recorded at 73C. Good.
- 2 compartment sink and large one compartment sink used for manual dishwashing.
- Vents were found clean and last serviced in Feb 2022.

Pest Management:
- Professional pest control company conducts routine checks.
- Improvement noted in terms of pest issue.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Staff has valid FoodSafe Level 1 certificate (2024).
