Observation: A cardboard barrier being used for sneezeguard protection at exposed side of gelato case.
Open box of oreo cookies found in storage room.
Operator using cardboard wall as a barrier to protect gelato during transport from storage room.
Corrective Action(s): Do not use cardboard. All finishes must be smooth and cleanable. Operator to substitute with a hard cleanble foodgrade surface.
Store oreos in a sealed washable container. To be corrected immediately.

All coolers are maintaining foods at 4 degrees C or colder.
All freezers are maintaining foods art -18 degrees C or colder.
Liquid soap and paper towel at sink.
Operator using two compartment sink for handwashing as it is more conveniently located. Therefore, dishwasher must be used for the washing of dishes throughout the day. It is to be turned on early as it takes quite a long time to warm up.
Dishwasher final rinse reached 74 degrees C at the plate surface.
Bleach water measured 100 PPM chlorine residual in wiping cloth bucket.
