Observation:
1) The ambient temperature of the under the counter cooler in the kitchen area closest to the bar glass washer measured approximately 8C.

2) The lid to the prep cooler closest to the wall was in disrepair.
Corrective Action(s):
1) Remove all potentially hazardous foods from this cooler and return them to working coolers. Have this cooler repaired until it can consistently achieve and maintain 4C/40F.

2) Repair the lid with materials that are impervious to water, smooth and easily washable.

- All other coolers measured 4C or colder - monitor the inserts of the cooler drawers closest to the cookline; reduce the amount of food in those inserts if needed
- Freezers measured -18C or colder
- Hot held foods measured 60C or hotter
- Temperature logs available for review; IR thermometer and in-cooler thermometers available
- Handwashing stations stocked with soap, paper towels and hot and cold running water
- Sanitizer measured 200ppm quats
- Dishwasher measured over 71C at the final rinse cycle
- Bar glasswasher measured between 50-100ppm chlorine
- Pest control is in monthly as per the strata, no recent issues
- Ice machine is clean
- FOODSAFE requirements met at the time of inspection
