Observation: 1. Toppings inside of chest freezer and inside of the walk-in cooler are uncovered.
2. A can was used for scooping the flour.
Corrective Action(s): Organize your chest freezer and cover all toppings when not in use. Remove the can and replace with equipment designed to scoop the flour.

Observation: The following was noted at time of inspection:
1. Chest freezer requires further cleaning as there is currently debris inside.
2. Bottom compartment of prep cooler needs to be cleaned. Currently there is debris lodged around the corners of the prep cooler.
3. Shelving units inside the walk-in cooler are caked in debris and grime
4. Corners of your 3-compartment sink have accumulation of mould-like residues
Corrective Action(s): Aforementioned items must be thoroughly cleaned. Any debris and grime, mould residues, must be removed from your shelving and inside your equipment.

Observation (CORRECTED DURING INSPECTION): Old equipment, such as soiled tomato pressers, were present on-site. Operator states that they are not being used.
Corrective Action(s): Equipment was voluntarily discarded at time of inspection. Products on-site must be maintained in sanitary condition.

Routine inspection conducted. Premise currently not open. Operator states that ownership change is to occur in March. The following was noted during the inspection:

Walk-in cooler at 2C
Prep cooler at 3C
Chest freezer at -18C
Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
3-compartment sink available for ware-washing. Ensure that you have bleach or QUATS available when premise is in operation - operator obtained bleach at end of inspection
Mop sink present at the back-of-house
Operator has FoodSafe 1
