Observation: 1) Caesar salad dressing made in house (contains raw egg) was stored at 13.4C. 2) Sliced tomatoes, cheese etc. in the same sandwich cooler was measured at 8.2 to 9C.
Corrective Action(s): 1) Caesar salad dressing discarded. Potentially hazarous food must be stored at 4C or colder and over 4C for no more than 2 hours. 2) Monitor temperature of food and relocate to working cooler if the temperature of the cooler does not come down in 1 hour.

Observation (CORRECTED DURING INSPECTION): Wet wiping towels were stored on the counter. No sanitizer in the back kitchen area.
Corrective Action(s): Please remember to place wet wiping towels back to 100ppm sanitizer when not in use. Operator mixed an extra bucket of sanitizer at time of inspection.

Observation (CORRECTED DURING INSPECTION): Rice scoop stored in a mug.
Corrective Action(s): Keep rice scoop stored in ice water bath and change the solution every 30 minutes to 1 hour.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings found by the back door, electric panel area. Unable to verify condition under dry storage racks across from walk-in cooler due to delivery blocking the way.
Corrective Action(s): Please remove droppings and monitor for pest activity. Keep front door closed.

Observation: Bread crumbs on the bottom shelf of standup freezer. Food debris in hard to reach area.
Corrective Action(s): Remove bread crumbs. Please ensure floor cleaning is done all the way to the wall.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Hot holding unit (right hand side by the stand up cooler) has deteriorated so that the wood chips are coming off and may fall into food held in hot holding unit.
Corrective Action(s): Sand and laminate the affected area or install a steel board on top of the affected area or replace the hot holding unit altogether provided that the size is suitable and is able to keep foods over 60C.

Observation: Undercounter sandwich cooler was measured at 7C. Thermometer in the cooler was not working. Door seals are no longer intact and filled with food debris.
Corrective Action(s): Operator turned down the cooler temperature and has contacted to have the cooler serviced at time of inspection. Please retain the service report for review. Instsall a working thermometer.
