Observation (CORRECTED DURING INSPECTION):
Maritime and Sage section, both domestic dishwashers were NOT set on the "Sani-Rinse" cycle. The "Sanitizing" option in the Rinse cycle MUST be selected to kill bacteria. The duration/time the dishwasher runs does NOT determine if the dishes are sanitized.
Corrective Action(s):
Retrain staff to ensure they are selecting the "Sani-Rinse" setting during the rinse cycle so dishes are being sanitized. During the inspection, staff were informed of this, but a formal training session or instructions shall be provided.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C; freezers were -15C or colder; thermometers present; and temperature recorded daily.
- Handsinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottle was 200ppm.
- General sanitation level is good.
- No signs of pests.
- FoodSafe certified staff present.
- All foods stored in food grade containers; covered; labeled; date coded; and stored 6" off the floor on shelves.
