Comments

A follow up inspection was performed for routine inspection MKIM-CCYT6J and the following observations were made:
- Hand washing station stocked with hot/cold running water, single use paper towels, and liquid hand soap
- General sanitation satisfactory in the following areas: under counters in sushi bar area, near the mop sink area, and inside the walk in freezer
- Walk in freezer equipped with working light bulb to produce adequate amount of light
- Raw proteins observed to be stored on bottom shelf
- Building maintenance employee visited site last night in order to fix the chemical dishwasher but was not successful.
- Operator contacted Chemical dishwasher manufacturer company to request a technician visit on Apr 6th
- Ensure to practice alternative method of dishware washing as discussed until chemical dishwasher has been repaired/replaced to produce at least 50 ppm chlorine residual on dish surface after final rinse.
- Recommend maintaining and updating a sanitation log & temperature log.
