Observation (CORRECTED DURING INSPECTION): Heavy rodent activities noted in the dry storage area. Many dried food packagings had gnaw marks on them. Most dried products in the dry storage area had rodent dropping and/or nesting materials on them. The operator initiated discarding foods that are contaminated by rodent activity.

Observation (CORRECTED DURING INSPECTION): In use utensils in the drink bar and in the kitchen were stored in an ambient temperature murky water.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. (Repeated violation) Hand washing sink by the ramen station was obstructed by ramen strainer. Ramen strainer removed at this time.

2. Hand washing station next to the 2 compartment sink was not usable as it had a drain issue. Water was not draining and pipe was leaking.

3. Single use paper towels were not available at the hand washing station next to the 2 compartment sink. Paper towels replenished at this time.
Corrective Action(s): Service the hand washing sink next to the 2 compartment sink.

Observation (CORRECTED DURING INSPECTION): (Repeated violation) Observed trays of raw eggs stored above vegetables. Eggs relocated to the bottom shelf.

304 - Premises not free of pests [s. 26(a)]
Observation: Following rodent activities were observed:

Kitchen
- Rodent droppings inside of the cabinet under the hot water dispenser.
- Rodent droppings under the dishwasher area.
- Rodent droppings throughout the kitchen near wall and floor junction.

Bar
- Rodent droppings inside of the cabinet under the hand washing sink.
- Rodent droppings near wifi machine storage cabinet.

Dry Storage
- Heavy activity noted in the dry storage area. Observed a live rodent caught on sticky trap.
- Large amount of rodent droppings and nesting materials on each food storage shelves and on foods directly.

Other
- Rodent droppings by the hot water tank area.
- Rodent droppings by the staff change area.
- Rodent droppings in the small room next to the customer washroom.
Corrective Action(s): 1. Clean and sanitize areas impacted by rodent activity. Soak rodent droppings with 100-200 ppm chlorine solution for 10-15 minutes before picking them up safely with paper towels. Do not vacuum.
2. Contact your pest control company for an assessment/treatment. A pest control report from a professional pest control company must be available for review in a subsequent inspection. The report must be post September 7, 2022, 4:00 P.M.
3. Once the facility is less crowded, identify and block any pest entrance points (e.g., holes and crevices).

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: 1. Heavily crowded dry storage area. Lots of foods stored directly on the floor, and was not able to monitor pest activity in the hard to reach areas.
2. Sanitation issue where food and water is easily accessible by pests. Refer to the violation code 306 for additional information.
Corrective Action(s): Reduce the amount of items stored in the dry storage area. All items must be stored >15cm off the floor to facilitate cleaning, and to monitor pest activities.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Sanitation issue noted in the following areas:
- Grease, food and standing water build up under the ramen topping station
- Food and standing water build up under the ramen noodle cooking station
- Grease and food build up under the main cook stove line (especially near the large 2 pots for soup bases)
- Standing water under the dishwasher, hand washing station and exit hall way.
Corrective Action(s): Clean and sanitize areas described in the observation section.

Observation: The following items must be removed from the facility to reduce crowdedness:
- Metal beam and large circular shaped wooden panel behind the sliding door cooler in the kitchen.
- Power washer, metal beam and old looking equipment in the room next to the staff washroom.
- Power tools and other tools (e.g., hand held saw) next to the hot water tank.
- Shaved ice machine in the staff change area.
Corrective Action(s): Remove items that are not required for your day-to-day operation out of the facility.
