Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Staffs describe that after dishware are cleaned from dishwasher, they are sorted in separate containers to be placed back to the line for reuse. There is no air drying step.
Correction: Reviewed proper warewashing procedure with staff onsite. Cleaned dishware must be air dried properly before reuse. Utilize existing racks for drying.

Nothing stored inside handwashing sinks, they are all accessible.
Extra racks have been allocated for drying clean dishware. Reviewed proper drying procedure with staff onsite.
Scoops for bulk food are stored outside of food containers in the kitchen.
Chicken for teriyaki are stored in small cooler under fryer station.
Fishballs are stored in food containers inside chest freezer in the back.
Sushi cooler door obtained and in use. Temperatures maintain at <4C.
Food handlers have changed to closed toe footwear.
No hole observed under sushi bar handsinks.
January pest control report received by e-mail.

Pending issues:
*Waterproof thermometer ordered and to be used - ensure to test it in the dishwasher and use the thermometer to check if it is working daily.
*Door gap in the storage room was identified to the operator - please seal this door gap to prevent pest entry for next inspection.
