302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): - In use wiping cloths had no sanitizer residual present on them and were being used to wipe prep table
- Bucket with prepared chlorine bleach sanitizer solution had concentration of 50ppm chlorine. Required concentration is 100-200ppm chlorine.
Corrective Action(s): - To prevent microbial growth on wiping cloth and prevent cross contamination of food contact surfaces, keep in use wiping cloths in sanitizer solution which is maintained at the required concentration (100-200ppm chlorine) between uses.
- Clean and sanitize food contact surfaces at least every four hours or more frequently if surface has become contaminated.
- Corrective action taken at time of inspection: Concentration of sanitizer solution in bucket was increased to 200ppm chlorine and in use wiping cloths were placed in it. Prep table surface was sanitized.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Grime/residue present along edges of floor throughout premises
- Accumulation of grease present under shelving units where in use fryer baskets are kept
- Accumultation of grease and food debris present on floor under fryer
This has been a repeat issue which needs to be address on a long term basis. Some improvement in sanitation is noted; however, level of sanitation in above noted areas is not adequate.
Corrective Action(s): - Clean/scrub the above noted areas to remove all residue, grease and food debris.
- Ensure detail of cleaning and frequency is adequate to ensure these areas are maintained in a sanitary condition.

Corrective Action(s): - In the Operator's absence, at least 1 staff on duty must have Foodsafe level 1 certification (or equivalent). Ensure a sufficient number of staff have the required certification to ensure this requirement is met at all times.

Comments

- Handsinks (front and back) were supplied with hot and cold running water, liquid soap and paper towel
- Coolers were operating at 4C or colder
- Freezers were maintaining products in a frozen state
- Food products were stored in a food safe manner:
- Foods were covered.
- Raw meat (chicken) was stored separate from ready to eat products.
- Dry goods were stored on shelving.
- Improvement in the organization dry storage shelving is noted since previous inspection.
- Raw meat (chicken) is prepared on separate prep surfaces from the cooked and ready to eat items.
- Facilities present for manual dishwashing:
- Hot and cold running water available at 3 compartment sink
- Stoppers/plugs present
- Chlorine bleach present for sanitizing step. Chlorine test strips present
- Manual dishwashing sign posted
- Chlorine sanitizer solution present in spray bottle. Concentration measured 200ppm chlorine. *See violation above re: in use wiping cloths and sanitizer use
- Staff washroom was supplied with liquid soap and paper towel. Note: Chicko Chicken t-shirts were noted in staff washroom. It was unclear if they were clean or to be laundered and staff on duty did not know. Do not store staff uniforms in washroom as this is not a sanitary location. After t-shirts have been laundered, relocate to designated area outside of the staff washroom.
