Observation: Build up of mildew inside the ice machine.
Corrective Action(s): Clean the ice machine. Drain, scrub with bleach solution, dry then refill the ice machine.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Low temperature dishwasher dispensed <10ppm chlorine concentration. The operator stated that the dishwasher failed in the past.
Corrective Action(s): 1) Fix the dishwasher and ensure the sanitizer dispenses min 50ppm chlorine concentration. In the meantime, use the two compartment sink to manually wash containers and other food contact surfaces.
OR
2) Install a three compartment sink for manual warewashing. The dishwasher may be removed from the premises as all plates/containers/utensils for customers are take out only.
Propose a plan to the health inspector and a follow up inspection will be scheduled to verify compliance.

Comments

- General sanitation is good.
- All handwashing stations are supplied with hot/cold running water, soap, paper towels.
- Surface sanitizer available in designate red buckets with presoaked wiping cloths at 100ppm chlorine.
- Dry storage area has adequate space and wire racks.
- There is a dry storage unit downstairs. Most foods are stored in shelving units. One freezer. Only dry prepackaged foods can be stored here.
- No signs of pest activity. Pest control is with the mall management.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- Thermometers available in all refrigeration units.
- Immediately begin daily temperature log for all coolers/freezers. This will be verified during the next follow up inspection.
- Hot holding units > or = 60C
