Paper based inspection Report #F00242183:
Hand sinks provided with liquid soap and paper towels.
Bleach sanitizer available at 200 ppm. Dilute solution so that it is at 100 ppm.
Coolers registered at 2-4 deg C. Sushi display cooler at 1 deg C.
Freezers were at -28 deg C (front) and -18 deg C.
Hot holding for rice and miso soup >74 deg C.
Dishwasher final rinse reached 76 deg C at plate surface.
Temperature log NOT kept up to date since Nov. 2017
-Keep temperature log up to date. This documentation is a critical part of your Food Safety Management System.
Kitchen staff wearing uniforms and hair restraint.
No signs of pests note at time of visit. Ensure there is provision for pest control.
Ice machine was clean.
Dining area and washroom were in sanitary condition.
Note: Provided operator with bulletins (power outage, hot water, small fires).
Items to address:
1. Move food items in the electrical/hot water/ mop sink room so they do not block the mop sing and electrical panel.
2. Provide more storage space for dry goods. Space is limited in the back area.
3. Provide written Sanitation Plan procedure for the sushi rice roller.
4. Install paper towel holders for the front service and sushi bar counter.
