Routine inspection conducted. Facility is well-lit, maintained, and is supervised by a staff member. Students also prepare food in the cafeteria and have FoodSafe 1 certification.
1. Temperatures
- Stainless steel stand-up cooler (two-door) at 2C
- Stainless steel stand-up cooler (front) at 4C
- Stainless steel stand-up cooler (near ventilation hood) at 3C
- Chest freezers in auxiliary storage room range from -15 to -18C
- Temperature logs were kept up-to-date at time of inspection
- Food was directly dispensed to the students after being cooked. All products cooked today (e.g. rice, vegan chili) were discarded after the lunch rush into the compost. Leftovers are not served to the students
2. Hygiene and Sanitizing
- Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in kitchen and in staff restrooms
- Oasis 146(TM) multi-quat sanitizer at approximately 200 ppm in both spray bottles
- Multi-quat sanitizer dispenser releases approximately 400 ppm **Operator to call supplier to look at dispenser and provide operator with test strips. Actual concentration should be closer to 200 ppm**. Email report from supplier to the Environmental Health Officer
- Low-temperature dishwasher sanitizes with a final rinse chlorine residual of 100 ppm. Chlorine test strips are available. Dishwasher logs are up-to-date
- Clean rags present for wiping food contact surfaces
- Ventilation canopy, ladles, sieves, utensils, knives stored in good sanitary condition
3. Storage
- All food products stored at least 6" off the floor. *Remember that all items are to be covered immediately after use*
- Food-grade bins used for flour, bins are in good condition
- Dry storage products are in containers with tight-fitting lids
- Chemicals are stored separately from any food products / food contact surfaces
4. Pest Control
- Last report was from February 13, 2019. A reminder that adhesives in traps should be replaced every visit if they are no longer effective. Rodent activity noted outdoors, no rodent activity noted indoors during the inspection from the pest control company
5. Administrative
- Permit posted and up-to-date
- Staff supervisor on-site had renewed FoodSafe 1 (Expiry: October 2023). Thank you for keeping your FoodSafe certification updated
