- Coolers (stand-ups) are ≤ 4°C
- Freezers (stand-up, chest) are ≤ -18°C
- Steam table was not in use at the time of inspection. Ensure it is able to maintain foods at ≥ 60°C.
- High temperature dishwasher is available. Final rinse temperature reached ≥ 71°C at the plate level.
- 200 ppm bleach sanitizer is available
- Dry storage areas are maintained
- No signs of pests observed during inspection
- Premise is well lit
