Observation: Metal wire shelving located within both upright glass coolers is rusted and coating/paint is heavily flaked in some areas. Note: Items in storage were generally well covered at the time of inspection.
Corrective Action(s): Ensure that wire shelving located in the above-noted coolers is repaired or resurfaced to provide a surface that is smooth, non-absorbent, non-toxic, durable, and easy to clean. Chips of paint/rust may potentially contaminate uncovered food items. Date to be corrected by: March 5, 2019.

Routine inspection conducted:

- Coolers at 4 degrees C or less. Note: Preparation cooler at 4 to 5 degrees C at time of inspection (in use)--monitor to ensure food is maintained at 4 degrees C or less.
- Reach-in freezer at -19 degrees C
- Hot holding internal temperatures at 60 degrees C or more
- Hot and cold running water, liquid hand soap, and single use paper towels available for hand washing stations.
- Staff were observed to be properly washing and drying hands between tasks at time of inspection.
- Food stored safely at the time of inspection
- Bar glass washer measured 12.5 ppm iodine in rinse residual (required: 12.5 to 25 ppm iodine).
- Quaternary ammonium compounds (quats) sanitizer measured 200 ppm in labeled spray bottles.
- High temperature dishwasher measured 73 degrees C at the utensil surface during the final rinse (minimum 71 degrees C).
- Pest control reports reviewed for the last six months. Premises is serviced by a professional pest control operator.
- Temperature logs maintained.
