Comments

-Sushi prep cooler was at 4C (top and bottom).
-Under counter cooler was at 4C.
-Front display cooler ranged from 2C to 4C.
-Walk-in freezer shared with Fresh Street Market.
-Sushi rice had a pH of 4.0.
-Temperatures are checked four times daily.
-Sushi rice tested and recorded daily. Ensure AFC approved method (food safety plan) of checking pH is used (pH meter with calibrated buffers and not pH strips)
-High temperature dishwasher had a final rinse temperature of 76C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Proper single use glove practices observed at the time of inspection.
-Quats sanitizer pail was at 200ppm. Container properly labelled.
-Quats sanitizer dispenser was tested at 200ppm.
-Sushi mat plastic cover changed every 2 hours.
-General food storage practices good at the time of inspection. Foods stored off the floor and properly covered.
-General sanitation good at the time of inspection/
-No signs of pests noted at the time of inspection.
-FoodSafe Level 1 valid until March 24, 2023
