209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Inventory delivered as placed directly on the floor of walk in cooler. Boxes of wrapped cumumbers observed stored on the floor next to raw chicken on shelving. The cucumbers are at risk of being cross contaminated with raw proteins.
Corrective Action(s): Ensure all ready to eat foods or low risk foods are stored on dedicated shelving above or away from raw protein sources to prevent cross contamination. Do not store inventory directly on the floor as the floor is contaminated.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Dust and grease accumulation observed in hard to clean areas such as the FRP walls in the dish pit. The storage around the ice machine where the black, plastic wings trays are stored and around ceiling fans in walk in coolers. General deep cleaning is needed.
Corrective Action(s): Ensure to clean these areas as part of the schedule to prevent food contamination and accumulation of unwanted dirt and grease. Correction required in two weeks.

Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Equipment in good working order.
Ice machines are sanitary with dedicated hand scoop.
Temperature holding is adequate and in use with accurate thermometers and logs.
Take out containers and utensils are sanitary.
Quat sanitizer in use at 200 ppm in sani buckets detected,
Dishwasher final rinse at 50 to 100 ppm chlorine solution at the plate.
Glass washer in use at 12.5 ppm iodine detected. One glass washer not in use.
Chemical test strips and logs available in digital system. Checks completely twice a day.
2nd floor food station not in use and is closed for the season.
Valid Permit posted in conspicuous location.

Holding units:
Coolers at 4C and below. Freezers at -18C and below. Hot holding units and hot wells between 60C to 66C.
Fresh condiments and scoops suspended in ice and used/replaced within 2 hours -good.

Recommendation: The green overhead light sign above the deep fryer units is in poor condition. Repair is recommended to prevent sign from falling.
