Observation: The undercounter cooler (front) measured at 9.3C at the time of the inspection. Sauces and prepped vegetables stored inside.
Corrective Action(s): Move all potentially hazardous food items to the walk in cooler at 4C. Fix the undercounter cooler. The cooler must maintain temperature < or = 4C at all times. Do not store any food items inside this cooler until it can maintain temperature < or = 4C.

Observation: No FOODSAFE trained staff on duty. Supervisor stated that the none of the staff have FOODSAFE training.
Corrective Action(s): At min one FOODSAFE trained staff must be working at all times. Obtain FOODSAFE certificate or equivalent or schedule someone with a valid FOODSAFE certificate.

Comments

- General sanitation is good.
- Main handwashing station supplied with hot/cold running water, soap, paper towels.
- Three compartment sink available to manual warewashing. Sanitizer available at 200ppm QUAT concentration.
- Surface sanitizer available in designated red bucket at 200ppm QUAT concentration.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity.

Temperature control:
- All other coolers at < or = 4C
- Walk in freezer = -18C
- Beverage cooler = 4C
- Thermometers available in all refrigeration units.
- Daily temperature log available and kept up to date.
