High temperature dishwasher equipped with detergent and rinse aid. Reached >/= 71C at the plate level upon final rinse cycle (at least 82C at the manifold/dial). Operator checks manifold prior to running dishes through.

General sanitation is adequate
No signs of pests observed
Bathrooms in sanitary conditions. Handsinks stocked.
