Observation: Knives are stored in the gap between preparation cooler and stainless steel counter top. Food debris accumulation noticed on the stainless steel side walls where knives are stored. Knives contaminated with pathogens can directly contaminate the food.
Corrective Action(s): Clean and sanitizer side walls where knives are stored on a daily schedule. Clean and sanitize knives stored in the gap before using them for any food preparation.
