Observation (CORRECTED DURING INSPECTION):
A container of pre-cooked chicken cutlets was found to be stored on the counter, the temperature of the chicken was 15C. The chicken was made earlier in the morning and placed in the cooler. Around 11am, the container of chicken was removed from the cooler and stored on the counter. Bacteria has multiplied on the chicken as it sat at room temperature, patrons could become ill from eating the large amount of bacteria.
Corrective Action(s):
Immediately throw away the chicken. Only store proteins (chicken, beef, fish, seafood, etc) below 4C or above 60C at ALL times. Retrain all staff so they understand that the pre-cooked chicken must be kept in the fridge at all times. During the inspection, staff discarded the chicken.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -20C; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher had a rinse cycle temp of 75.9C at the plate's surface as per max/min thermometer.
- Bleach sanitizer in spray bottle and cloth bucket had [Cl2] above 200ppm.
- All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale.
- General sanitation level is satisfactory and is being maintained. The exhaust canopy and filters were professionally done in February 2024. Next service due in August 2024 as per service sticker.
- Food containers, lids, and cookware are in good working order.
- Minimal use of disposable gloves being used, however staff wash hands frequently.
- Ensure all cardboard is thrown away every night.
- There are working light bulbs in all fixtures in the kitchen area. The light level meets Food Code standards to allow for safe working conditions and encouraging cleaning.
- The floor of the kitchen and food processing areas has been repainted. It is smooth and sealed and of a light blue color to easily see dirt.
- The wall behind the chest freezer, in the kitchen, has been repaired. It is smooth, sealed and cleanable.
- Valid, FoodSafe Level 1 certified staff present.

ACTION
- Store pre-cooked chicken cutlets in the cooler at all times.
- Replace the counter tops in the back kitchen area as they are covered in a vinyl material that is not food grade and is not sealed in areas. Extension approved to complete these repairs by December 2024.
