Observation (CORRECTED DURING INSPECTION): Scoop stored inside fish batter container - handle caked with batter.
Corrective Action(s): Do not store scoops inside food storage bins. The handle of the scoop could become contaminated from the food handler, then touch the food.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Old rodent droppings and food debris found by hot water tank, and underneath grill/stove top/deep fryer equipment. Floor under dish washing sink has some food debris accumulation that may provide a potential food source for rodent pests.
Corrective Action(s): Clean away old rodent droppings and food debris. Use a 30mL bleach to 1L water solution to sanitize the areas discussed during inspection. When cleaning rodent droppings, dampen the area first, and then clean.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: For preparation of chicken tika, a cloth is used to remove cooked chicken from the large metal skewers to protect food handler's hand from heat. The same cloth is used throughout the day, and is then laundered the following day. There is a supply of these clothes on the bottom shelf by flour containers.

The chicken grease, fat, and meat residues on the cloth may allow any surviving pathogenic bacteria to grow and produce toxins on the cloth throughout the day, which could lead to cross contamination as it is used.
Corrective Action(s): Use tongs or other food prepartion utensils to remove the cooked chicken - such utensils can be easily cleaned and sanitized. Using one cloth throughout the day can cause cross contamination.

Note: Operator proposed that he will use one clean cloth per batch, and place used clothes in designated laundry bucket to be laundered on hot water and high heat settings at end of day. Clean cloths will be stored protected from contamination.
