Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Double compartment sink behind the coffee bar is being used for utensil cleaning.
Correction: The double sink behind the coffee bar is to be used for food prep and one sink is to be designated for hand washing. This sink is to be accessible at all times. Clean and sanitize all utensils and dishes in the main dishwasher. Do not store dirty dishes in this sink. Keep hand sink area accessible for staff to easily wash hands. **A small, designated hand washing sink located closer to the coffee bar area is highly recommended.

Hand washing:
*** Sink designated for hand washing near the front coffee service area is empty and can be used for hand washing.
Keep this sink area accessible and encourage staff to wash hands frequently and when hands are contaminated.
*** Recommend a designated small hand sink closer to the front service area.
Cleaning and Utensil Cleaning:
- Utensils are being washed and sanitized in the commercial dishwasher (and not the double sink).
- Continue with regular and deep cleaning. Follow a written routine cleaning schedule.
